I've always been a lover of breakfast. Be it a fancy, drawn out affair with eggs benedict, mimosas, and Belgian waffles, or a simple fried egg with coffee at home. There's just something about starting the day with a clean slate, a delicious meal, and (hopefully) no big worries just yet. My weekday mornings are a little more rushed than I would like, but eating breakfast always makes me slow down, even if for a few minutes.
Granola is one of those foods that never appealed to me until I made it at home. The store-bought versions leave a lot to be desired, are loaded with sugar, and never seemed satisfying enough to me. I have been making this version for a while now, and was excited to get the chance to mix it up when flipping through Sprouted Kitchen's new cookbook - Pumpkin Pecan Granola. Served over yogurt and maybe an apple on the side... this is the perfect fall breakfast.
If you have never made your own granola before, I suggest you do so as soon as possible. It is so easy (stir ingredients together, spread on baking sheet, bake and stir, voila!), and most recipes make enough to last for lots of breakfasts and snacking.
