crepes and jam

this past saturday i made my mom's crepe recipe and served them with my aunt sweetie'shomemade black raspberry jam. i can remember standing around the stove on the mornings my mom made crepes, holding out a plate to catch them fresh and hot out of the skillet. it wasn't until i went to italy that i had crepes with fillings other than aunt sweetie jam. while nutella and fresh fruit are delicious, i think i will always prefer them rolled up with this jam, and drizzled with a bit of syrup.

mom's recipe

  • 1 1/2 cup flour
  • 1/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tsp vanilla
  • 2 cups milk
  • 2 tablespoons melted butter
  • 2 eggs

combine dry ingredients in a large mixing bowl. in a separate bowl, combine all wet ingredients and stir into dry ingredients until combined (will be runnier than pancake batter).

lightly butter a 10-inch skillet. pour 1/2 cup batter into the pan, and allow to cook for a few minutes (you will start to see tiny bubbles). flip and cook a couple minutes on the other side.

repeat with remaining batter and serve hot with jam and syrup (or other desired fillings).

makes 10-12 crepes.
