i made this quick and easy pasta salad for a memorial day cookout, and it was so refreshing and light. perfect when served alongside a cheeseburger and strawberries! :) 





greek pasta salad
- 1 pound bowtie pasta
- 1 1/2 cups chopped cucumber
- 1 1/2 cups grape tomatoes, halved
- 1 jar kalamata olives, drained
- 1 block feta cheese, crumbled
dressing:
- 1 tablespoon whole grain dijon mustard
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
- 1/3 cup red wine vinegar
- 1/3 cup olive oil
for the salad - bring a large pot of salted water to a rolling boil. add bowtie pasta, and cook according to package directions. in the meantime, prep cucumber, tomatoes, olives, and feta cheese. when pasta is finished cooking, drain and rinse with cold water. toss with veggies and cheese, set aside.
for the dressing - whisk together the mustard, pepper, and salt with a fork in a large bowl. add the red wine vinegar and olive oil, and whisk together to combine. add the pasta salad and toss until coated with dressing.
i recommend refrigerating before serving - but you can also eat as is! serves 10-12 as a side.
