after sharing my dad's crab cake recipe a couple of weeks ago, i knew the next family recipe i had to post about - my mom's shrimp scampi.
this dinner always felt fancy to me as a kid, and i was shocked when i made it myself for the first time. it is incredibly easy to put together, and is so delicious (if you like shrimp, of course!) i highly recommend serving this dish with a side of rice (i used brown, but my mom says you have to use white :) and some grilled vegetables. keep some lemon wedges nearby to squeeze over the whole dish, and there you have it - the perfect summer dinner!






mom's shrimp scampi
- 1 stick salted butter
- 2 cloves garlic
- 1/4 cup olive oil
- 1 1/2 tablespoons italian seasoning
- flour (about 1/2 cup - for dredging)
- 2 pounds shrimp - peeled and deveined, i also like to remove the tails
- lemon wedges
preheat oven using the broil setting. in a 9x11 baking dish, melt the butter and olive oil together, and crush the cloves of garlic into the mixture. add italian seasoning, stir to combine.
next, dredge each shrimp in the flour, then coat with the butter sauce and place in a line along the pan. when ready to cook, broil for 3 to 4 minutes until pink and cooked through.
